It allows the person to summon mythical monsters and magic not unlike that found in a game of Duel Monsters...
... And I totally would use it to play duel monsters like they did in ancient Egypt.

It may not be a natural element, but it costs $27 mill a gram. It was either that or Antimatter ($62.5 Trillion a gram), and I don't think antimatter is something you should keep outside a special container.

Yeah, antimatter should be kept in vacuum, suspended in an insanely strong magnetic field.

I would choose ice. That way I could walk on water by instantaneously freezing water I was walking on, in an exact mold of my foot, so I would have support. Even on the ocean, I could walk and there would be giant pillars of ice wherever I went. I could turn sweat that was on me into ice to cool myself down. Any time I got injured I could stop the bleeding by freezing the top layer of blood. I could also use it as a shield. Make it so that anything (Excluding my clothes because I get to decide what I turn) that touched my skin, none that is exposed to be safe, into ice. That way I would be hard to hurt. Also I could turn the air all the way to a certain point into ice and use that as protection.

Any condensation on my drinks I could turn to ice to cool it down without ruining the quality of the drink itself. Instant ice skating on ponds. Etc. Etc.

Mine has so many applications. Too many to list.
